Eating salads for lunch can become boring. I'm always trying to find new ways to make salad interesting - especially for my significant other. He is a meat & potatoes man so even the fact that I am able to get him to eat a salad for lunch once a week is amazing. I like spicy food and he likes slightly spicy. I've developed this easy buffalo chicken salad that he loves!
This salad is also very flexible. If chicken tenders are on sale, that is what I buy for this salad. However, my grocery store also sells turkey tenderloins - which are about the same size as chicken tenders and can be way cheaper than chicken at times. One note about turkey tenderloins: they tend to be thicker than chicken so I will slice them in half lengthwise to make them thinner.
I designed this recipe for 1 serving since I am flextarian and mostly eat vegetarian/vegan lunches. While I combine the classic cheese for buffalo chicken (blue cheese) this recipe also works with feta. Finally, since this is a salad, other toss-ins would go great with it! Such as toasted hemp seeds or sunflower seeds.
