Many years ago, as I started thinking more about my health, I started eating mostly plant based. This was a big change for me since I ate how the typical American eats. Meat was always the star of the meal and side dishes were vegetables and either rice, pasta or potatoes. To make the transition smooth, I started one day a week not eating animal products. It definitely took some getting used to.
Our routine is something that has been created over many years and it serves a purpose. Routine makes life easy. We don't have to think about routines. We simply do it. Shopping in the grocery store is usually on auto-pilot. We know the layout of the store, what aisles we need to go down and what food we are going to buy. There is usually very little deviation until something causes us to change, such as holiday shopping or planning for an event.
Today I eat plant based 4 days a week, without any animal products. It took years for me to work up to this routine. In the beginning, the learning curve was steep. I had to figure out what I was going to eat on the days when I wasn't eating meat. That meant searching for new recipes and trying new ingredients.
Now that I am skilled at eating plant based, the one trap I am falling into is always trying new ingredients and foods. This includes drinks! After all, you can only eat so many vegetables, whole foods and plant based products. Plus, water by itself can get a little boring so having a different drink to try is fun.

Mushrooms are significant as a medicinal food. In fact, many mushrooms have long been used throughout Asia for medicinal purposes. Mushrooms are proven to possess anti-allergic, anti-cholesterol, anti-tumor, and anti-cancer properties. Mushrooms are rich in carbohydrates and act as a prebiotics to stimulate the growth of beneficial bacteria in the gut (known as the gut microbiota) which has many health benefits. (Source; NIH)

Now, to complicate things, there are a ton of mushroom varieties out there. I tend to stick to a few well known mushrooms when cooking - white button, portobello and shitaki. Since there are a lot more varieties that have health benefits that I am not even used to seeing in local food stores, I decided to try Four Sigmatic SuperFoods 10 Mushroom Blend.

What I love about the mushroom blend is a little bit goes a long way. I love using it in soups and casseroles.
