Cauliflower has certainly become very popular as of late. You know it is a hot commodity when major national brands are selling riced cauliflower in the frozen vegetable section! And how about the frozen cauliflower crust in the organic food section?
Cauliflower is very healthy as well. According to The World's Healthiest Foods, cauliflower is an excellent source of vitamin C, vitamin K, folate, pantothenic acid, and vitamin B6. It is a very good source of choline, dietary fiber, omega-3 fatty acids, manganese, phosphorus, and biotin.

Cheesy Cauliflower Pancakes by RealHouseMoms. This recipe uses eggs as the binder and cheese (duh). If you want to make this vegan, you could substitute flax eggs and vegan cheese. Either way, this make a great side dish that is different from just roasted or steamed cauliflower. Click here for the recipe.
Roasted Cauliflower Tacos with Chipolte Romesco Sauce by Minimalist Baker. The sauce is really the key to this recipe. I could imagine using the sauce for any type of taco. Crusty Baked Cauliflower and Farro from Smitten Kitchen. This casserole has all the makings of comfort food. A crusty top and creamy (thanks to the ricotta and cheese) inside. I envision serving it alongside a meatloaf. Click here for the recipe.
