Flavors of the Season: Cabbage

Cabbage is probably one of the most underutilized vegetable in my opinion. I really like cabbage! I am always trying to find new ways to make the most of it. Plus, it can be really inexpensive at times. Cabbage is an excellent source of vitamin K, vitamin C and vitamin B6. It is a good source of fiber, potassium, magnesium and calcium.

Savory Cabbage Pancakes by Budget Bytes. If you like potato pancakes, you'll love these cabbage pancakes. I can eat them as a side dish to a roast beef or by themselves for a vegetarian main dish. This recipe comes with a variety of suggested toppings you can put on them. Or eat them plain with just a little salt and pepper, like I do! Click here for the recipe.

Unstuffed Cabbage Skillet Dinner by Bake at Midnight. I love this idea because instead of making cabbage rolls, all the ingredients are cooked in one skillet. The recipe does not use the traditional tomato sauce which is fine by me. A few tweaks I would make to the recipe: use bone broth instead of concentrated beef stock OR make this a vegetarian dish by using vegetable stock and meat-free crumbles. Easy White Bean & Cabbage Soup by Making Thyme for Health. This is vegan, grain-free and so easy! I love soup! I could eat it everyday no matter if it is winter or summer. This soup uses canned beans and canned tomatoes which helps it cook up quick. Click here for the recipe.

Italian Sausage and Cabbage Stew by Simply Recipes. The recipe calls for savoy cabbage but the notes state regular cabbage can be used instead. Also, if you wanted to make this recipe vegetarian, simply eliminate the sausage and use two cans of beans instead of one. Click here for the recipe.
