Celery! Oh Celery! How do you eat celery? If you are like most, in stick form and dipped in hummus. But celery can be used in so many different ways. Plus, I always reserve the leaves to use in salads, sauteed in mixed veggie dishes (they take seconds to cook) and in soups. Celery is one of the most perfect foods!
Celery has only 6 calories per medium stick but is an excellent source of vitamin K, and a very good source of potassium and fiber. The new-news about celery is it has anti-inflammatory benefits, especially for the digestive tract. (Source: whfoods.com) With all of these health benefits, you should be incorporating more celery into your daily routine.
