Flavors of the season: Radishes
We've made it to March! Spring is almost here and I've started thinking about my vegetable garden and all of the great dishes we'll make from the fresh produce. I've also been thinking about my local farmer's market. Can't wait for it to open again! There are always unique products and new things to try.
But we still have to get through March. While I dream of spring, I noticed that radishes will be plentiful soon. Since I've only ever eaten them in a salad, I decided now is the time to look for new ways to make the most of radish season. Did you know radishes are high in vitamin C, folate and potassium? Also, they only have 20 calories per cup!

Roasted Radishes by The Clever Carrot. I love roasting vegetables and using them in salads or just eating them as a side-dish. Roasting always gives a new flavor profile to almost any vegetable. I'm surprised I didn't think about roasting radishes before now! The Clever Carrot states that when radishes are roasted their flavor becomes mellow not as peppery as when they are eaten raw. Cinnamon Sugar Radish Chips by Pinch of Yum. I would have never thought to make chips out of radishes. But why not? I like crispy veggie chips of all kinds. Pinch of Yum recommends serving the chips as a topping to yogurt. I am thinking they would be really yummy on top of overnight oatmeal. Click here for the recipe.
Radish Butter by Eating Richly. What really intrigued me about this recipe is the radish is used uncooked and chopped really finely in a food processor. Then mixed into butter. I can imagine this as a spread for a baked potato or even as a spread for a veggie wrap. Click here for the recipe.
Loaded Radishes by Gnom Gnom. Leave it to a diet craze to result in a great recipe idea! Apparently, on a keto diet potatoes are off limits. This recipe mimics a loaded potato but uses radishes for the main ingredient. I would make this vegan by using dairy-free cheese and eliminating the bacon. Click here for the recipe.
Creamy Radish Soup by Nellie Bellie. I love that this recipe uses almond milk because I am lactose intolerant! But if you aren't, I'm sure regular milk would work just as well. Oh - did I mention this soup comes together in 30 minutes. Click here for the recipe.
