How to make slow cooker meals that are fast, easy and healthy
I love my slow cooker! It is a staple in my kitchen. It makes my life so easy since I can put a bunch of ingredients in it, put it on low and when I come home, there is a healthy dinner waiting to be eaten. I am going to share with you healthy and easy dinner recipes that you can make in the slow cooker. This will save you time and money since most dinners result in left-overs, which is perfect for lunch. I love when that happens.
The keys to making a healthy slow cooker meal:
1) Use organic ingredients to avoid pesticides and modified ingredients that can negatively affect your health.
2) Load up on the veggies to make a satisfying meal with less meat.
3) Use organic frozen and canned vegetables for easy and inexpensive add-ins.

Flavorful Slow Cooker Jambalaya from Kim's Cravings. Jambalaya can be made with meat and fish or without. This recipe is meat-based and has some key short cut tips, like using a rotisserie chicken instead of letting the slow cooker cook it. When I make this vegetarian, I substitute kidney beans for the meat. Nothing like coming home to a big pot of jambalaya for dinner. Click here for the recipe.
Slow Cooker Teriyaki Meatballs from Let's Dish. Meatballs are so easy to make and this recipe states you can use frozen meatballs if you are really crunched for time. The teriyaki sauce makes a perfect topping for the meatballs to be served over rice. Add some broccoli and a salad for a dinner is on the table in just a few minutes. Click here for the recipe.
Sweet Potato Lentil Stew from Fit Food Finds. This stew has a nice spice to it but not too much. Lentils give the dish a heartiness to fill everyone up. A perfect meatless Monday meal. Crock Pot Mexican Casserole from Well Plated. This recipe includes ground turkey and quinoa. However, you could omit the turkey and still have a really great recipe. This recipe freezes for at least three months making it a perfect recipe to make a large batch and freeze for another time. Click here for the recipe.
Crock Pot Roast with Vegetables from Yummy Healthy Easy. This recipe takes a normally tough piece of meat, a chuck roast, and makes it tender and tasty. Load up on the veggies and it is a complete meal after a long day. Click here for the recipe.
Healthy Slow Cooker Chicken Cacciatore from Creme de la Crumb. This recipe is ingenious because you add the spaghetti to the slow cooker and let it cook for 15-20 minutes. Making it a one-pot-wonder! Click here for the recipe.
Slow Cooker Vegetarian Chili from Gimme Some Oven. Chili has to be the most identifiable slow cooker recipe. I love that Gimme Some Oven recommends farro or quinoa as an ingredient. That gives this recipe a whole new take on meatless Monday. Click here for the recipe.
Slow Cooker Quinoa, White Bean and Kale Soup from Chelsea's Messy Apron. This soup is very hearty and thicker than what you think. Orange Roast Pork from The Spruce Eats. Pork is a nice treat but it can take awhile to cook, making it a perfect slow cooker meat. This recipe includes a recipe for making gravy from the drippings.
