Recipe Inspiration For The Most Delicious Meals

I love to cook! But there are times I feel like I need inspiration, especially on the days when I don't feel like cooking. My requirements for cooking inspiration is the recipe has to be an easy, quick process and healthy. I believe we can have fast and healthy meals without eating processed foods.

Food is medicine! That is why I strive for healthy meals. Meals that have at a minimum 80% certified organic ingredients, a lot of vegetables and if meat or fish is involved, the cleanest product I can afford to buy.

Eating this way changes your health and your life. I began eating plant based 3 to 4 days a week about 5 years ago. I had measurable health changes. My cholesterol went down, bowel movements became more regular, weight loss was no longer an issue and I had more energy.

Two years ago I went organic. My health continued to improve. I started having a bowel movement every day, have not had a cold, seasonal allergies are almost gone and I have more energy! I didn't think I could have more energy but I do!

Turns out when we start to eliminate chemicals in our lives, our body is healthier. Chemicals and pesticides are endocrine disruptors. According to the National Health Institute, endocrine disruptors are found in many everyday products, including some plastic bottles and containers, liners of metal food cans, detergents, flame retardants, food, toys, cosmetics, and pesticides. Scientists believe endocrine-disrupting chemical exposures, even at low amounts, can alter the body’s sensitive systems and lead to health problems. Pretty scary, huh?

Products like stir fry kits or shredded cabbage in the fresh or frozen aisles in the grocery store make it easy to get healthy vegetables into delicious meals. Add meat or eat them without. The kits can be an economical way to get a healthy dinner on the table fast.

It may be difficult to follow a recipe exactly if there are food allergies in the house, the family doesn't like an ingredient or you can't buy it because it is out of season or out of stock. Improvising to make the recipe your own is very easy. Swap ideas are below:

  • Frozen vegetables instead of fresh vegetables. I love frozen because they are already chopped and take less time to cook. They also adapt well to sauces.

  • Rice instead of quinoa, barley or farro. Some grains are harder to like then others especially with little ones in the house. Rice is a great substitute since it is gluten free.

  • Pork instead of chicken. While chicken is a household favorite, it may be hard to get or expensive. Pork can be used and may be less expensive. This swap can be reversed if there is a sale on chicken.

  • Ground chicken, turkey or pork instead of ground beef. If you are looking to cut back on red meat, you won't miss it at all when you substitute other ground meats. Plus, ground chicken, turkey or pork is usually less expensive than ground beef.
