Ingredients:

 

Leftover asparagus stems

Vegetable Broth or water

 

Directions:

 

  1. Put asparagus stems in a pot.

  2. Cover them with vegetable broth or water

  3. Bring to a boil

  4. Lower heat to a simmer. Simmer 45-60 minutes.

  5. When asparagus stems are fork tender, remove the pot from the heat and use an immersion blender to pulverize the stems.

  6. The broth will have fibrous strings that need to be drained out of it.

  7. Using a colander over a large mixing bowl, carefully use a soup ladle to take the broth out of the pot and put it in the colander. To help the broth to drain, use the back of the ladle to gently press against the liquid out of the stems.

  8. Throw out the leftover fibers

  9. Continue this process until all you have is broth!
