Serves: 4

 

Ingredients:

 

1 15 oz can of Salmon

1 flax egg

1 cup bread crumbs

3 TBSP Old Bay Seasoning

Olive Oil

 

Directions:

 

  1. Make flax egg in a medium mixing bowl:

    1. 1 TBSP ground flaxseed mixed with 3 TBSP water. Mix and wait 5 minutes for the mixture to become thick.

  2. Meanwhile, open Salmon and take out all bones

    1. As many as you can - they are digestible so don’t go crazy. Take out the really big ones.

    2. Also, I like to take off the skin that is still on the salmon but it can be left on

  3. Place Salmon in mixing bowl with flax egg

  4. Add breadcrumbs and Old Bay Seasoning

  5. Mix until all ingredients are incorporated

  6. In a frying pan, place some olive oil and swirl along the bottom of the pan. Heat up the pan.

  7. Start to make the salmon cakes by taking 3 TBSP of the mixture and forming patties between your hands

  8. Place the patties in the frying pan

  9. Cook on both sides for 8 minutes; they will be brown on both sides
