Serves 4

 

Ingredients

 

4 bone-in pork chops

1 green pepper, sliced into long slices

1 onion, sliced

10 button mushrooms, sliced

1 tsp pepper

1 tsp onion powder

Sprinkling of salt

Olive oil

 

Directions:

 

Note: we like our onions cooked so they are caramelized. If you prefer this type of onion, start cooking the vegetables before the pork chops. If you prefer your onions less cooked, start the onions & mushrooms at the same time as the pork chops.

 

  1. For the pork chops:

    1. Pour 1-2 TBSP olive oil in a frying pan and heat

    2. Season the pork chops with the pepper and onion powder

    3. Once the oil is hot, place the pork chops in the pan to cook

    4. Cook 5-7 minutes on one side, then flip to cook another 5-7 minutes. Depending on the thickness of the pork chops, it may take a few minutes longer to cook. When juices run clear, they are done.

  2. For the veggies:

    1. In a frying pan, pour 1-2 TBSP olive oil and heat

    2. Put the onions in first, cook 5 minutes as they soften and start to brown. Stir occasionally.

    3. Next, add the mushrooms to the onions and cook 7-8 minutes more so the mushrooms release their juices.

    4. Finally, add the peppers, stir and put a lid on the vegetables. The peppers will only take about 3-4 minutes to steam. They will be crunchy.

 

When the pork chops are done, top with the veggies. Enjoy!
