Flavors of the season: Banana's

I know what you are thinking - Banana's? Really? They are available all year round. Why are you writing about banana's being the flavor of the season? The reason I am thinking about banana's and all the yummy things you can do with them is because of food waste. Hear me out - food waste is a big problem globally. In the US alone, NRDC estimates that about 40% of our food is never eaten! Isn't that appalling?

 

 

 

The supermarket I shop at has a reduced bin where they package up fruit & veggies that are not pretty. They are dented, bruised and maybe have only 1 or 2 days left of shelf life. They package it up and significantly reduce the price. This is why I am thinking of banana's! There have been packages & packages of bananas that are starting to brown. So I bought a pack of 8 for $0.67 cents and made Banana Bread! 

 

 The recipe I used was from Cookie & Kate. It uses maple syrup or honey as the sweetener. I used maple syrup because I only have raw honey in my pantry which is a bit difficult to use when baking. Chocolate chip banana bars. Can you say YUM? This recipe takes the goodness of bananas and sweetens the deal with chocolate chips. A great snack or a way to keep breakfast interesting! Click here for the recipe. 

 

 

Banana Magic Cake. This cakes has three layers of goodness! While the cake bakes, it forms 3 layers with egg whites lifting to the top and the bananas creating a custard like center. The picture just makes my mouth water! Click here for the recipe.

Banana Beignet Bites. When I saw this recipe, it immediately brought me back to a trip I took to New Orleans and had to have Beignet's and coffee at Cafe du Monde.
