Meal Plan: Flextarian dinners

I really enjoy cooking! The whole process is very relaxing to me. Whether I need to chop, dice and prep for a recipe or simply throw it in the crock pot, I always prefer cooking to eating out. Plus, my boyfriend loves my cooking (at least that is what he says). This weeks meal plan has two vegetarian dinners.

 

I am trying to get my boyfriend to eat less meat. He has been having at least 1 vegetarian dinner per week and now I am trying to slip in two at least once a month. I don't think he has even noticed! RECIPES

 

London Broil is a great option for dinner and if there are any left-overs, it makes for a great salad for lunch! The key to a tasty london broil is all about the marinade. One of my favorite marinades use mustard, balsamic vinegar and garlic. Click here for the marinade recipe. 

 

 

Country Style Ribs! There is nothing better than fall off the bone ribs. Country style ribs cooked in the crock pot is a perfect set it & forget it type of dinner.  For a vegetarian meal this week, we are making stuffed portabella mushrooms. I love portabella mushrooms because they are so meaty that they definitely make a great main dish for vegetarian nights. This recipe stuffs the mushrooms with vegetables. Serve them with a salad and a side of broccoli rabe sauteed with garlic and you will not leave the table hungry! Click here for the recipe.

 

 This week we are having two vegetarian dinners! The second one is a zucchini vegetable casserole. This recipe is vegan and tastes like a summer garden. Since this casserole is very light, I serve it over rice. Plus, I add a salad to go with it. Click here for the recipe. 

 

 

Cod is a favorite fish of mine. It is a white, flaky fish that can be cooked a lot of ways. Since it is mild in flavor, it takes well to a variety of spices. I really like the Mrs. Dash spice mixes because they do not contain salt. I follow a salt restricted diet so Mrs. Dash products allow me to get maximum flavor without salt. We like spicy foods in my house, so I use the Mrs. Dash Extra Spicy on cod. Sprinkle some on the cod and saute it in olive oil until it is opaque. I serve it with rice and sauteed zucchini and onions. If you don't like spicy recipes, Mrs. Dash also has a great tomato basil spice that lends itself nicely to cooking with mild fishes.
