Meal Plan: Left-over Turkey Dinners

WOW! What a meal! Thanksgiving is always a big meal around my house and having the same dinner one other night makes the memories happen all over again. But then, what do you do with all that turkey? This weeks meal plan takes advantage of the left-over turkey plus, as always, I have a vegetarian recipe (or 2) this week to help balance all that meat eating.

MONDAY

Turkey Pot Pie with a biscuit crust. This is a delicious and unique way to use up left-over turkey. The recipe calls for half & half or heavy cream but I would substitute nut milk and add a little cornstarch to make a thick sauce. That will help cut down on the calories plus be friendly for lactose intolerant people like myself! Click here for the recipe. 

TUESDAY

First vegetarian meal of the week: Portobello Mushroom Burgers. The surprise to this recipe is that the Portobello Mushroom is the bun! That's right! All that meaty goodness from the mushroom is the bun. The recipe calls for a balsamic vinegar marinade to flavor the mushrooms. A nice light dinner that can be served with a salad to help balance all that Thanksgiving over-eating. Click here for the recipe. 

WEDNESDAY

Turkey Soup. Yes - turkey soup! A hearty meal that is packed full of veggies. Serve with an arugula salad with artichoke hearts and roasted red peppers. No one will leave the table hungry! Click here for the recipe. 

 

THURSDAY

Vegetable Baked Ziti. Oh yea! A little Italian pasta dinner to break up the turkey routine. But a vegetarian style with vegetables in the ziti. Serve with a salad and a side of broccoli. Why does broccoli go so well with Italian dishes? Click here for the recipe.

 

FRIDAY

Leftover Turkey Enchiladas. What? You haven't thought about merging leftover turkey with a Mexican dish? Well you are missing out! Turkey is mild enough to use in any Mexican dish since the sauces and seasonings are the big flavor boosters. Click here for the recipe.
