Meal Planning: Two Vegetarian Dinners

This weeks meal planning post has two vegetarian dinners! I try to have at least one dinner per week that is meatless but every once in a while I am able to sneak in two nights. The key seems to be making sure my life partner is satisfied and not feeling hungry afterwards. So if I use hearty ingredients it seems he can accept having two vegetarian meals in one week. 

 

Plus, let's face it, I get bored cooking to same meat every week. After all there are so many more vegetable options versus meat options in the supermarket. I mean it is always chicken, pork, turkey, fish and occasionally red meat. While there are different cuts, it can get boring.

RECIPES

 

MONDAY

 

Let's start the week off with a veggie stir-fry. My motto is Veg it Up! So whenever I can add more vegetables to any meal, I do. The key to a good veggie stir-fry is the sauce. I use The Best Stir Fry Sauce from Tastes Lovely. Click here for the recipe. Then I use a variety of veggies. In my house we love mushrooms, onions, peppers, broccoli and cauliflower. The best part of veggie stir-fry is you can use frozen veggies! The sauce helps to make frozen veggies flavorful. When done cooking, put the veggies on top of rice (brown or white) and dinner is done! 

 

TUESDAY

 

Oven baked Blackened Tilapia with sauteed zucchini and broccoli. Tilapia is an inexpensive white fish that lends itself nicely to a variety of spices and sauces. During the week, I try to serve a couple of dinners that have meat or fish as the main dish with two veggies. This helps to reduce our carb intake during the week. Don't get me wrong - I don't have anything against carbs BUT we get our fill with breakfast & lunch so why not lighten up at dinner time? Click here for the recipe from Speedy Recipe. 

 

 

 

 

WEDNESDAY

 

This is vegetarian night #2! Chickpea chili on baked potatoes with steamed broccoli and a salad. Yum! We don't eat potatoes that often so this dinner is a treat. The recipe is from Fork Over Knives. THURSDAY

 

Italian Chicken pasta stirfry. This recipe is chock-ful of herbs and is ready in less than 30 minutes. Who doesn't love a flavorful and speedy recipe? Perfect for a weeknight dinner. The recipe is from the Flavor Bender. Click here for the recipe. Doesn't it look delicious?

 

FRIDAY

 

Meatloaf night! After a long, hectic week, meatloaf is the perfect comfort food. Open up a nice bottle of red wine while the meatloaf cooks. Pair it with canned or frozen green beans and a creamy prepackaged noodle dish for a fast dinner. Click here for a basic meatloaf recipe.
