Meal Planning: Nah - let's think about post-holiday season!

Every weekend I post a meal planning strategy for the upcoming week. But let's face it! At this point, there are only two weeks left of the year. Who is meal planning? Well, people like me who have been burning vacation days every Friday since before Thanksgiving! But if you have taken you vacation time so that you are not back to work until after the New Year, then this post is for you!

 

I'm deviating from meal planning to give you some tips to get back into the routine after January 1st! Yes - over the next two weeks, indulgence will rule vs. the normal routine. It is hard to get back to it after a couple of weeks off. If you are like me, you are trying to moderate the indulgences. Maybe staying away from carbs so you can have another glass of wine! Or maybe loading up on veggies and keeping servings of meat to just a few bites so you can have more cookies!

 

Whatever your vice, you will probably be ready to get back to normalcy once the holidays are over. So let's proactively think about January 2nd and get a few recipes ready to go that will get you back on track. I am highlighting three vegetarian dinners this week. I don't know about you but I definitely crave lighter and non-meat focused meals after the holidays.

RECIPES

 

Cheesy Broccoli Quinoa Casserole with Kale by Running in a Skirt.  This is a modern twist on the broccoli rice casserole that you may have had as a child. Quinoa is high in protein which means everyone will be full! There is a leafy green already added to the casserole (kale) but I would still serve this with a salad. Click here for the recipe.

 

Vegetarian Stew with Marsala by Cook the Story. This vegetarian stew is a perfect weeknight dinner that can be made ahead of time and then simply warmed up on the stove or in the microwave. There is an option to serve the stew in a bread bowl or just on it's own and add croutons. I would serve it on its own with a side of crusty bread for dipping. Click here for the recipe. 

 

 

Hearty Black Bean Quesadillas by Budget Bytes. Who doesn't love a quesadilla? All that stuffed goodness in the tortilla! YUM! This is a simple yet filling way to keep meatless meals interesting! Click here for the recipe.

 

Honey Mustard Baked Fish and Vegetables by Cotter Crunch. Fish is a great way to get lean protein and omega-3s into your diet. Plus, it is fast cooking! This recipe uses one pan and it is ready in 30 minutes! Hello - time saver! Also, the recipe is flexible using cod, haddock or tilapia! Click here for the recipe.

 

Healthy Chicken Fajita Bowls by Yellow Bliss Road. Have you gotten on the bowl bandwagon? I have! A bowl is so much fun because of the combination of the meat and veggies all in one container. The bowls can be ready in 30 minutes given rice usually takes 20 minutes if using white rice. However, brown rice takes longer! Click here for the recipe.
