WHEW! What a week! With New Year's being on a Monday this year, it seems like I worked a whole month in 4 days at the office. Plus, trying to get lunches & dinners together for the week, it was a struggle. Thank goodness for frozen options! Now that the holiday's are over, this is the first weekend I can get back a meal planning routine.
Routine is good! I am a person who enjoys having the opportunity to cook healthy meals for myself and my significant other. I find cooking relaxing and meal planning makes my life so much easier during the week. Plus, I have healthy food to eat all week.
This week's meal planning post focuses on light lunches for January. After a crazy couple of months going to holiday parties, seeing family and friends, and over-indulging somewhat, it is time to get back to a lunch routine that is vegetable focused.

Did you know soups are a great way to fill up at lunch time? I could eat soup everyday - even in hot weather. They are so filling and definitely keep me full until almost dinner time. Even though we have cut out bread in our household, every once in a while we want a sandwich. So I'll either buy a healthy bread with lots of grains or a gluten-free bread depending on who is eating the sandwich.
