Flavors of the season: Pineapple

Pineapple is so good when it is good! Did you know pineapple is good for your digestion? That's right! It contains Bromelain, an enzyme that supports digestion. I started thinking about how to use pineapple in cooking beyond just pineapple upside down cake. Hence, this post!

 

 

According to Live Science, pineapples are high in vitamin C and the mineral, manganese. Both are good for the immune system and antioxidant defenses. Perfect for the month of January when colds & flu may be wreaking havoc on the health of those you are in frequent contact with. Below are some recipes to maximize the use of pineapple while it is in season.

RECIPES

 

Sticky Pineapple Chicken by Just A Taste. This is a unique pineapple recipe because the sauce combine pineapple juice with traditional Asian ingredients like soy sauce & hoisin sauce. The recipe uses chicken thighs, which tend to be more affordable, since they are juicer than breasts. Click here for the recipe. 

 

Cuban Avocado Pineapple Salad by Amee's Savory Dish. This salad is perfect for lunchtime! One change I would make, instead of iceberg lettuce, I would use arugula. Beef Pineapple Enchiladas from Budget Bytes. I envision this recipe can be made with the beef or without for a meatless dinner. The reason I say that is because it uses black beans in addition to ground beef. Just eliminate the ground beef with a soy-free meat crumble and BOOM! Vegetarian dinner is served.
