Flavors of the season: Celery

February 16, 2018

Celery! Oh Celery! How do you eat celery? If you are like most, in stick form and dipped in hummus. But celery can be used in so many different ways.  Plus, I always reserve the leaves to use in salads, sauteed in mixed veggie dishes (they take seconds to cook) and in soups. Celery is one of the most perfect foods!

Celery has only 6 calories per medium stick but is an excellent source of vitamin K, and a very good source of potassium and fiber. The new-news about celery is it has anti-inflammatory benefits, especially for the digestive tract. (Source: whfoods.com)  With all of these health benefits, you should be incorporating more celery into your daily routine.

I found some really easy recipes to do just that! If you try any of the below, please let me know what you think. RECIPES

No Cream Creamy Celery Soup by Errens Kitchen. I love making soup! The whole process is so relaxing to me. The chopping, sauteing, cooking & pureeing. Nothing better than making soup especially if it if cold outside. I love this cream-less celery soup because I am lactose intolerant. Thus, I am always looking for ways to substitute for milk products. This recipe includes potatoes to help thicken and make the soup creamy. Click here for the recipe.

Celery Salad with Dates, Almonds and Parmesan from Cookie & Kate. I mentioned earlier that I like to use the celery leaves in salad - that is usually a mixed green salad. This celery salad incorporates the leaves as well! I love that! No food waste!  This is a light, refreshing way to serve chopped celery. Click here for the recipe.

Tasty Ground Beef and Celery stir-fry by Spice the Plate. What? Cooked celery is in Chinese food, why not make a stir-fry? This recipe uses Asian flavors like chili peppers, oyster sauce and soy sauce. You could substitute ground turkey or chicken or make this vegan by using meat-free crumbles. Click here for the recipe.

Addicting Paleo Green Smoothie from Our Savory Life. Celery is just one of the very healthy green ingredients in this smoothie. Other ingredients include kale, apple, orange and banana. Sounds like a great kick-start to the morning. Click here for the recipe.

Braised Celery from A Girl Defloured. Celery lends itself to being a very simple vegetable to cook. Yet it is filling. This braised celery side-dish is so quick and easy that it is surprising more people don't serve it on the side. Click here for the recipe.

I hope this post demonstrated how versatile celery can be. If you try any of the above let me know what you think! Follow my blog on Bloglovin.
