Flavors of the Season: Parsnips

Since I am always trying to insert a variety of vegetables into our diet, I was intrigued about parsnips, which are in season in February. I occasionally buy turnips to mix into recipes but I never stop to buy parsnips. Even though they are right next to the turnips where I shop!

 

 

Parsnips are a good substitute for potatoes and carrots in most recipes. I didn't realize that parsnips may help support a healthy heart. Since heart disease runs rampant in my family, I am always thinking about how my diet can support heart health. Parsnips contain high levels of potassium, magnesium, zinc and iron. Potassium and magnesium help to regulate blood pressure and reduce stress on the heart. (Source: Organic Facts) 

 

Now I have to find some recipes! During the week, I serve one dinner that is meat-free. Every once in awhile I can get my life partner to eat more than one meat-free dinner. I am meat-free 3-4 days a week so I wanted to find recipes that work for both of us.

Carrot, Parsnip, and Lentil Casserole from Noshing with the Nolands. This is a hearty meal that can easily be your meat-less dinner choice. The recipe calls for milk & butter but you can easily make this vegan by substituting nut-milk and vegan butter. Click here for the recipe.

 

Roasted Cauliflower and Parsnip Soup from Spoon Fork Bacon. I love that this soup uses another veggie that is in season in February - cauliflower!
