Cooking with Seasonal Ingredients: 5 Unique Mango Recipes

Mangoes have been on sale recently at the grocery store since they have been in season. When I buy them, I typically cut them up and eat them like any other fruit. But I got thinking about how to cook with them. Just like pineapples and peaches are used in meals, I figured there have to be mango recipes to try. When I Googled mango recipes, I was not disappointed. 

 

But first, what are the key health benefits of mangoes? According to Care2.com mangoes can:

  • Lower cholesterol due to their high levels of fiber

  • May help manage diabetes since they help to normalize insulin levels

  • Improves digestion since mangoes contain enzymes 

  • Supports the immune system with high levels of vitamin C and vitamin A

  • Alkalizes the body due to the tartaric acid and malic acid

  • Can be used externally to help clear clogged pores and eliminate pimples

Mangoes are pretty darn healthy! And I thought I was just getting some vitamin C and fiber when I eat them for a mid-morning snack. Another great thing about mangoes is they can be used just raw in recipes like fruit salsas or tossed into mixed green salads. So while I found some interesting recipes to try, the fruit is just fine on its own.

Baked Coconut Mango Chicken by Cooking on the Weekends. This is a unique recipe that calls for the chicken to marinate in a coconut mango sauce which eventually becomes a final sauce for the dish. The chicken used in the recipe is a whole chicken cut up into pieces with the skin on and the bones in. Served with rice or pasta, this is a fruity take on a chicken bake. Mango Bread from Pretty.Simple.Sweet.  The description of this bread states it is more moist and cake-like vs. bread. Perfect for a mid-morning or afternoon snack.  One nice tip in the recipe is not to over mix the batter after combining the dry and wet ingredients. If it is over mixed, the bread will be tough. Vegan Mango Cheesecake Bars from Well Vegan. Not only does this dessert look pretty but it is frozen so it will last a couple of weeks in the freezer. Making it the perfect indulgence since you can cut it into snack size portions and eat when ready! Click here for the recipe.

 

Mango Energy Bites by Minimalist Baker. This recipe uses dried mango which you'll be able to find anytime of the year. But it was a unique use of mango which is why I included it.
