Innovative ideas for quick, nutritious dinners

Dinner can always be a challenge. When it is a hectic week or you just don't feel like cooking, it can be easy to defer to takeout. Take out foods are going to be unhealthy no matter how you try to make it healthy. Ingredients will not be organic and since you aren't sure how the food was cooked, it could be high in sodium and sugar. I am not saying not to get take out EVER. I am just saying that you shouldn't fool yourself that a take out salad is a healthy choice. 

The reason take out food is not going to be healthy is the lack of organic ingredients. When you are eating non-organic food, you are eating pesticides and chemicals that your body is going to try to fight. Also, you are going to be hungrier quicker because non-organic food is lacking in important nutrients. The vitamins and minerals you think you are getting by ordering a takeout salad aren't as high as you could be getting. Organic food is higher in nutrients which means you are going to be fuller longer. 

 

Now, some people may say that organic food is more expensive. I would say you should think about it this way. First, if you are fuller longer, you are going to eat less. So the money spent on organic food actually becomes cheaper since you will have leftovers. Organic food lasts longer. I recently bought organic broccoli from the local health food store. It stayed fresh in my refrigerator for 2 weeks! I couldn't believe how long it lasted! Finally, organic food helps your body be as healthy as it can be. By making your body as healthy as it can be, you are not spending money on healthcare costs as frequently. Eating organic does not prevent you from every getting sick but it can reduce the frequency.

 

Let's get on to the recipes. All of the recipes below are ready in 30 minutes or less, including prep time. You could also make them over the weekend to just reheat the meals during the week.

Pesto Zucchini Noodles with Shrimp from Diethood. Zucchini noodles are the best invention ever! I love that they cook in 3 minutes and give your dinner an extra boost of vegetable goodness. Pair this with a salad and you have a fast and healthy dinner in under 30 minutes. Click here for the recipe.

Quick and easy organic Chicken stir-fry from Whole Lifestyle Nutrition. As promised, prep and cooking was done in 30 minutes. The recipe combines chicken with mushrooms, broccoli, onions and carrots. The sauce is made from chicken stock, soy sauce and arrowroot. Click here for the recipe.

Casarecce Pasta with Brocolini Rabe from the Healing Tomato. I've never heard of casarecca pasta before. But it looks similar to a penne pasta so if you have penne in your pantry, that is what I would use. I also think bowties would work well with this dish because a vegan butter sauce is part of the recipe. This dish only takes 29 minutes from prep to table and it makes a great meatless Monday option. Taco Chicken Salad from Lexis Clean Kitchen. This is a great way to use up left-over chicken from another meal. Plus it has a variety of healthy ingredients such as roasted red peppers, black beans, corn kernels and romaine lettuce. Spring Roll Bowls from Tastes Better from Scratch. Have you gotten on the bowl bandwagon? If not, this recipe will convince you. While the recipe is fast, there are unique ingredients if you are going to make it as is.
