I'm not sure if you ever feel this way, but sometimes dinner can seem so routine. The same old meals cooked in the same way. When I start getting bored with cooking dinner, I seek out new recipes to try. If you follow my blog, most of you know that I am going to "veg it up" so even if a recipe doesn't highlight vegetables as the main course, I am definitely serving them on the side! For at least two dinners this week, we will eat two vegetables with the main course - no carby side dishes, such as rice, pasta or potatoes.

Tilapia is a versatile white fish that can baked, fried, sauteed or put into fish stew. We like to have a spicy coating on our fish and this recipe from 101 Cooking for Two really hits the mark. The tilapia is baked so it is a healthy cooking method. Of course, you can modify the spice to your own families taste. Stuffed Steak is a beautiful presentation and a treat. We don't eat much red meat in our house but every once in a while it is a nice treat. When I feel the urge to cook something creative, stuffing a steak hits the mark. Plus, you don't need to buy an expensive cut of meat to make this main dish. Roasted chicken is a favorite dinner in my house because you can do so many things with the left-overs. I really like the organic roasted chicken from Whole Foods. Ham is an ingredient that is very versatile and can jazz up any meal. However, it can be expensive if it is not on sale. At the supermarket I shop at, it is more economical to buy Ham steaks and dice them to be used in main dishes. I really like this healthy ham casserole using cauliflower as a sauce.Plus, this can be made on the weekend and simply reheated during the week for a quick dinner.
